Cucumber Onion Relish
|Salt||1 1⁄2 Teaspoon|
|Onion||1 , minced|
|White vinegar||1 Cup (16 tbs)|
|Pimiento||1⁄2 , chopped|
Peel cucumbers, cut into halves length wise, and scoop out seeds with teaspoon.
Put cucumbers through food chopper, using coarse blade.
Combine with salt.
Let drain for 1 hour in colander.
Add remaining ingredients.
Cover and store in refrigerator.
This will keep for several weeks.
Stir every 2 or 3 days.
