Raw Pepper And Cucumber Relish
|Sweet red pepper||2|
|Chopped cucumber||6 Cup (96 tbs)|
|Chopped onion||1⁄2 Cup (8 tbs)|
|White vinegar||1 1⁄2 Cup (24 tbs)|
|Water||1⁄3 Cup (5.33 tbs)|
|Sugar||3⁄4 Cup (12 tbs)|
|Mixed pickling spice||2 Tablespoon (Tied In A Bag)|
Cut peppers in half and discard seeds and membrane.
Peel and seed the cucumbers.
Chop peppers and cucumbers fine, or mince coarsely.
Add onion and salt.
Stir well and leave 10 minutes, then drain thoroughly.
Measure remaining ingredients into a saucepan and bring to a boil.
Simmer 10 minutes, then remove spice bag and add vegetables.
Pack into hot sealers and seal.
Store in a cool place.
Leave 4 or 5 weeks.
