Marinated Tomatoes And Cucumbers

Ingredients
  Campari tomatoes 2 Pound (Bc Hot House)
  English cucumbers 2 (Long, Bc Hot House)
  Sweet yellow bell pepper 1 (Bc Hot House)
  Oil 3⁄4 Cup (12 tbs)
  Red wine vinegar 1⁄2 Cup (8 tbs)
  Chopped fresh oregano 1 Teaspoon
  Fresh thyme leaves 1⁄2 Teaspoon
  Sugar 1⁄2 Teaspoon
  Salt 1 Teaspoon
  Garlic powder 14 Teaspoon
  Chopped fresh parsley 1⁄2 Teaspoon
Directions

1. Coarsely chop tomatoes, cucumbers and yellow pepper. Arrange alternately in a shallow dish.
2. Combine oil, vinegar, oregano, thyme, sugar, salt and garlic powder in a jar. Shake until well mixed; pour over vegetables.
3. Marinate for 3-4 hours, basting occasionally. Drain vegetables; sprinkle with parsley.
