Cucumber Mint Relish

Ingredients
  Peeled seeded finely diced cucumbers 3 Cup (48 tbs) (2 Large Ones)
  Light mayonnaise 1⁄4 Cup (4 tbs)
  Finely chopped fresh mint 2 Tablespoon
  Chopped fresh flat leaf parsley 2 Tablespoon
  Grated lemon rind 1 Teaspoon
  Fresh lemon juice 1 Tablespoon
  Salt 1⁄4 Teaspoon
  Freshly ground black pepper 1⁄4 Teaspoon
Directions

Stir together all ingredients in a bowl; cover and chill 30 minutes.
