Cucumber Onion Relish
|Salt||1 Cup (16 tbs)|
|Cider vinegar||2 Cup (32 tbs)|
|Sugar||1⁄2 Cup (8 tbs)|
|Water||1⁄2 Cup (8 tbs)|
|Mustard seed||2 Tablespoon|
|Celery seed||1 Tablespoon|
|Hot red peppers||3 , minced|
Peel cucumbers and onions and slice very thin.
Add salt and let stand in a covered crock overnight.
Drain and press dry.
Combine the remaining ingredients and bring to a boil.
Boil for 3 minutes.
Add cucumbers and onions and let come to boil again.
