Hot & Sour Cucumber Sticks

  English cucumber 2 , ends trimmed, cut in half lengthwise
  Sesame seed oil 1⁄2 Teaspoon
  Roasted black sesame seeds 2 Teaspoon (Dry Roasted)
  Pomegranate seeds 2 Tablespoon (If Desired)
Hot and sour dressing
  Rice vinegar 1 Cup (16 tbs)
  Sugar 1⁄2 Cup (8 tbs)
  Salt 3⁄4 Teaspoon
  Whole red chili 2 Small, stemmed, cut in half lengthwise, seeded, ribs removed (Fresh Ones)

With a small spoon, scrape out and discard seeds in each cucumber half.
Cut each half lengthwise down middle in 2 to 3 long strips.
Cut strips in 1 -1 /2-inch-long sticks.
Prepare Hot & Sour Dressing.
Stir in cucumber sticks.
Cover and refrigerate at least 1 hour or up to 6 hours.
Stir in sesame seed oil up to 30 minutes before serving .
With a slotted spoon, remove cucumbers sticks and chili peppers to a serving dish.
Remove peppers, if desired.
Sprinkle with black Dry Roasted Sesame Seeds and pomegranate seeds, if desired.
Hot & Sour Dressing: In a large bowl, combine all ingredients.
Stir well until sugar is dissolved.
