Beet And Cucumber Relish

Ingredients
  Shredded cooked beets 2 Cup (32 tbs)
  Beet cooking liquid 1⁄4 Cup (4 tbs)
  Cider vinegar 1⁄4 Cup (4 tbs)
  Diced peeled cucumber 1 Cup (16 tbs)
  Onion 1 Small, grated
  Sugar 3 Tablespoon
  Salt 1⁄4 Teaspoon
  Pepper 1 Dash
  Chopped parsley/Fresh dill 1 Tablespoon
Directions

Thoroughly mix all ingredients except parsley.
Cover, and store in refrigerator for several hours.
Add parsley or dill just before serving.
