Cool Cucumber Lime Mold
|Cottage cheese||1 Cup (16 tbs)|
|Nonfat dressing||1⁄2 Cup (8 tbs) (Miracle Whip)|
|Cold water||1 3⁄4 Cup (28 tbs), divided|
|Lime gelatin||3 Ounce (1 Jello Pack)|
|Peeled seeded finely chopped cucumber||1 Cup (16 tbs)|
|Finely chopped onion||2 Tablespoon|
|Chopped fresh dill/1 teaspoon dill weed||2 Teaspoon|
Place cottage cheese and dressing in blender or food processor container; process until smooth.
Bring 1 cup water to a boil.
Gradually add to gelatin; stir until dissolved.
Stir in 3/4 cup cold water.
Add to cottage cheese mixture, mixing until blended.
Chill until thickened but not set; fold in cucumber, onion and dill.
Pour into lightly oiled 6-cup mold; chill until firm.
