Cucumber Ring Supreme
|Unflavored gelatin||1 Tablespoon (1 Envelope)|
|Lemon juice||2 Tablespoon|
|Cream cheese||8 Ounce, cubed and softened (1 Package)|
|Cucumbers||6 Medium, pared|
|Mayonnaise/Salad dressing||1 Cup (16 tbs)|
|Finely chopped onion||3 Tablespoon|
|Snipped parsley||1⁄4 Cup (4 tbs)|
Prepare Cucumber-trim Layer: Mix 1/2 envelope 1 1/2, teaspoons) unflavored gelatin, 1 tablespoon sugar, and 1/2 teaspoon salt in small saucepan.
Add 3/4 cup water; heat and stir till gelatin and sugar are dissolved.
Stir in 2 tablespoons lemon juice.
Pour into 6 1/2 cup ring mold.
Chill till partially set.
Overlay thin slices from 1/2 unpared cucumber in bottom of mold.
Chill till almost firm.
Meanwhile, mix the 1 envelope unflavored gelatin, sugar, and 3/4 teaspoon salt in saucepan.
Add 2/3 cup water; stir over low heat till gelatin and sugar are dissolved.
Stir in lemon juice.
Gradually beat hot gelatin mixture into softened cream cheese with rotary beater till mixture is smooth.
Halve cucumbers and scrape out seeds; grind using fine blade, or finely shred.
Measure 2 cups drained ground cucumber and add with remaining ingredients to cream cheese mixture.
Pour over almost firm gelatin in mold.
Chill till firm
