Scalloped Cucumber

Ingredients
  Cucumber 1 Medium, peeled
  Green pepper 1 Medium, chopped
  Parsley 1 Teaspoon
  Salt To Taste
  100% whole wheat bread 1 (Made Into Crumbs)
  Skim milk/Chicken bouillon 1⁄2 Cup (8 tbs)
  Margarine 1 1⁄2 Teaspoon
Directions

Cut cucumber into thin slices.
In a small casserole, arrange in layers with green pepper, parsley, salt and crumbs.
Repeat layers.
Pour in skim milk (it should come almost to top).
End with a layer of crumbs.
Bake at 375° F. till cucumber is soft, about 40 minutes.
Dot with margarine and run under broiler for 1 minute
