These baked cucumbers is a stuffed and baked recipe. Made with a mix of cucumber pulp with onions and butter cooked slightly, the baked cucumbers can be served as a side with any meal of choice.
3 Large (Good Size)
1 1⁄2 Tablespoon
Fine dry bread crumbs
3⁄4 Cup (12 tbs)
Finely chopped parsley
1 1⁄2 Teaspoon
1 Cup (16 tbs), cut into pieces
Wash cucumbers; cut in half lengthwise.
Scoop out as much pulp as possible without breaking skin.
Brown onion in butter; add other ingredients mixed with cucumber pulp.
Stirring constantly, cook 5 minutes or until dry.
Place filling in cucumber shells.
Bake in preheated 375 °F oven until shells are soft and mixture is brown on top.
