Cucumber Mojito - St. Patrick's Day

Happy St. Patrick's Day! Mix up this cool and easy-to-make cocktail for your St. Patty's Day Party. It's perfect to serve guests and to cool off during the spring and summer months.
  Cucumber 2
  Mint 1⁄4 Bunch (25 gm)
  Boiling water 1 Cup (16 tbs)
  Sugar 1 Cup (16 tbs)
  Lime 6 , juiced
  Ice cubes 3 Cup (48 tbs)
For serving
  Vodka/Rum 1⁄2 Cup (8 tbs) (as required)
  Club soda/Tonic water 1 Cup (16 tbs) (as required)

1. Peel the cucumbers and slice them into chunks. Retain the peel and shape them for serving.
2. In a blender, put the cucumber pieces and blend till smooth.
3. In a large bowl, strain them and discard the pulp. Set aside.

4. In the blender add the mint leaves and pour ½ of the cucumber juice. Blend till smooth. Transfer it into the bowl with the rest of cucumber juice.
5. In a measuring cup, take boiling water and add sugar and lime juice. Mix well till combined.
6. In a pitcher pour the cucumber-mint mixture, syrup and ice cubes and mix well.

7. In a serving glass, pour the cucumber juice. Add vodka and soda as desired. Garnish with the cucumber peel and serve chilled.
