Cuban Style Roast Pork
|Roasted garlic soup mix||3 Tablespoon|
|Lemon||1 , juiced|
|Dried oregano||1 Teaspoon, crumbled|
|Chili powder||1 Teaspoon|
|Freshly ground black pepper||1⁄8 Teaspoon|
|Boneless pork loin||3 Pound (1 Piece)|
1. Place rack in center of oven and heat oven to 400°F. Pour soup mix into a small bowl and add lemon juice. Stir in 1/4 cup water, oregano, chili powder, and pepper.
2. Place pork in a medium roasting pan. Spoon garlic mixture over pork. Roast until an instant-read thermometer inserted in the center of the roast reads 155°F, about 45 minutes. Transfer pork to a cutting board, cover loosely with foil, and let stand 5 minutes before carving.
3. Add 2/3 cup water to roasting pan and stir, scraping up any brown bits from bottom of pan. Slice pork, place on a serving platter, and serve with pan juices.
