Fresh Mint Mojitos

Ingredients
  Arugula/Rocket 1 Cup (16 tbs)
  Beets 1 Cup (16 tbs)
  Onions 2
  Gorgonzola cheese 1 Cup (16 tbs)
  Red vinegar/Balsamic vinegar 1 Tablespoon
  Olive oil 1 Tablespoon
  Pepper To Taste
Directions

Boil the beets until soft or you can use canned beets. Slice it.
Place the arugula in a salad bowl, you may chop it if you like, but i leave it whole.
Add the sliced onions and the sliced beets
Add the vinegar and oil
Add the salt and black pepper
Add the Gorgonzola cheese
Mix gently.
Place in a serving platter
Serve and enjoy!

Not sure if it was the Beets or the Cheese but this tasted nothing like a Mojito.......
