Fresh Mint Mojitos
|Arugula/Rocket||1 Cup (16 tbs)|
|Beets||1 Cup (16 tbs)|
|Gorgonzola cheese||1 Cup (16 tbs)|
|Red vinegar/Balsamic vinegar||1 Tablespoon|
|Olive oil||1 Tablespoon|
Boil the beets until soft or you can use canned beets. Slice it.
Place the arugula in a salad bowl, you may chop it if you like, but i leave it whole.
Add the sliced onions and the sliced beets
Add the vinegar and oil
Add the salt and black pepper
Add the Gorgonzola cheese
Place in a serving platter
Serve and enjoy!
