|Olive oil||3 Tablespoon|
|Chopped low fat ham||1⁄2 Cup (8 tbs)|
|Chopped onion||1 Cup (16 tbs)|
|Garlic||3 Clove (15 gm), minced|
|Tomato sauce||1⁄2 Cup (8 tbs)|
|Canned fat free low sodium chicken broth||15 3⁄4 Ounce (1 can)|
|Long grain parboiled rice||2 Cup (32 tbs) (such as Uncle Ben's)|
|Ground cumin||1 Teaspoon|
|Ground oregano||1 Teaspoon|
|Black pepper||1⁄2 Teaspoon|
|Canned black beans||15 Ounce, rinsed and drained (1 can)|
|Finely chopped green bell pepper||1⁄2 Cup (8 tbs)|
1. Heat oil in a large Dutch oven over medium-high heat. Add ham,-saute 1 minute. Add onion and garlic,- saute 2 minutes. Stir in tomato sauce and broth,- bring to a boil. Add rice and next 5 ingredients (rice through bay leaf), and bring to a boil.
2. Cover, reduce heat, and simmer 20 minutes, stirring occasionally. Discard bay leaf. Sprinkle each serving evenly with bell pepper. Garnish each serving with a cilan-tro sprig, if desired.
