  Olive oil 3 Tablespoon
  Chopped low fat ham 1⁄2 Cup (8 tbs)
  Chopped onion 1 Cup (16 tbs)
  Garlic 3 Clove (15 gm), minced
  Tomato sauce 1⁄2 Cup (8 tbs)
  Canned fat free low sodium chicken broth 15 3⁄4 Ounce (1 can)
  Long grain parboiled rice 2 Cup (32 tbs) (such as Uncle Ben's)
  Ground cumin 1 Teaspoon
  Ground oregano 1 Teaspoon
  Black pepper 1⁄2 Teaspoon
  Canned black beans 15 Ounce, rinsed and drained (1 can)
  Bay leaf 1
  Finely chopped green bell pepper 1⁄2 Cup (8 tbs)

1. Heat oil in a large Dutch oven over medium-high heat. Add ham,-saute 1 minute. Add onion and garlic,- saute 2 minutes. Stir in tomato sauce and broth,- bring to a boil. Add rice and next 5 ingredients (rice through bay leaf), and bring to a boil.
2. Cover, reduce heat, and simmer 20 minutes, stirring occasionally. Discard bay leaf. Sprinkle each serving evenly with bell pepper. Garnish each serving with a cilan-tro sprig, if desired.
