Orange Coeur A La Creme
|Unflavored gelatin||1 Tablespoon|
|Cold water||1⁄2 Cup (8 tbs)|
|Boiling water||1⁄2 Cup (8 tbs)|
|Cottage cheese||1 1⁄3 Cup (21.33 tbs)|
|Vanilla extract||1⁄2 Teaspoon|
|Coconut extract||1⁄4 Teaspoon|
|Orange||1 Small, peeled and sectioned|
Sprinkle gelatin over cold water in blender container to soften.
Add boiling water; process until gelatin is dissolved.
Add remaining ingredients except orange; process until smooth.
Pour into a small bowl; chill until consistency of unbeaten egg whites.
Dice all but two orange sections, fold diced sections into gelatin mixture.
Divide evenly into two 1 1/2-cup molds; chill until set.
Unmold and garnish each serving with one reserved orange section.
