Spinach A La Creme

  Spinach 2 1⁄2 Pound
  Butter 2 Ounce
  Flour 2 Tablespoon
  Milk 6 Fluid Ounce (1 1/2 Gills)
  Salt To Taste
  Pepper To Taste
  Sugar To Taste
  Nutmeg 1 Pinch
  Lemon juice 1 Tablespoon
  Freshly ground pepper To Taste
  Fried croutons 1 Cup (16 tbs)

Cook the spinach and drain well.
Put into a pan over gentle heat to dry off, add half the butter and stir in the flour.
Cook for a few minutes then add the milk, salt, pepper and a pinch of sugar.
Bring to boiling point, cover and simmer over low heat for about 15 minutes.
Add a pinch of nutmeg and adjust the seasoning.
Just before serving add the remaining butter in small pieces, a squeeze of lemon juice and a dash of pepper.
