Peach Creme Fraiche
|Peach slices in juice||20 Ounce|
|Frozen low fat non dairy whipped topping||1 Cup (16 tbs)|
|Almond extract||1 Teaspoon|
|Plain gelatin||1 Tablespoon (1 Envelope)|
Drain the peaches.
Reserve four slices for garnish.
Discard the juice or reserve it for another use.
Put the peaches, whipped topping, and almond extract in a blender or food processor.
Blend until smooth.
In a small saucepan, mix together the gelatin and water.
Let stand five minutes.
Heat over low flame, stirring constantly until the gelatin is dissolved.
Add to the peach mixture.
Blend another few seconds.
Spoon into four dessert dishes.
Refrigerate until serving time.
Garnish with the reserved peach slices and additional whipped topping, if desired.
