Zucchini Sour Cream
Zucchini Sour Cream is a delicious preparation of zucchini in sour cream sauce. This dish is generally served as a side dish; however, this combination of zucchini and sour cream is also used for making some wonderful dishes such as cakes, cupcakes, fritters, bakes, etc. Zucchini is a low calorie and low fat vegetable and high in other nutrients such as vitamins and minerals and sour cream on the other hand is a very rich source of calcium, essential for healthy bones and various other nutrients such as minerals and vitamins. But the fat content is high in regular sour cream; however, low fat sour cream too can be used. The key ingredients that go into making Zucchini Sour Cream are sliced zucchini (unpeeled), sour cream (regular or low fat, as desired), and chopped onion. Chicken bouillon granules, dill weed, sugar, salt, lemon juice add flavor and taste to the dish. All-purpose flour is used for thickening the cream.
Method of Preparation
Zucchini and onion are boiled in water with salt, dill weed and chicken bouillon. Once the water has boiled, the contents are simmered till the zucchini is tender and then taken off the stove. Butter, lemon juice and sugar are stirred in, followed by a mixture of sour cream and flour. When the contents are blended well, they are cooked till the sauce thickens and the dish is served hot.
Zucchini sour cream dish (one serving) contains a good amount of fat (about 3 g) and cholesterol (about 9 mg). It also contains about 5 g of carbohydrate, 2 g of protein and 1 g of fiber.
