Peaches And Cream
|Ripe peaches||3 Large, peeled|
|Fresh lemon juice||1 1⁄2 Teaspoon|
|Long grain rice||1⁄2 Cup (8 tbs)|
|Water||1 Cup (16 tbs)|
|Nonfat dry milk solids||1⁄2 Cup (8 tbs) (Instant Variety)|
|2% milk||1⁄2 Cup (8 tbs)|
|Almond extract||1⁄4 Teaspoon|
Puree 2 of the peaches in a food processor or blender; stir in lemon juice.
Coarsely chop remaining peach.
Cook rice according to package instructions.
Puree rice with remaining ingredients except almond extract and mint in a food processor or blender.
Simmer rice mixture in a saucepan over medium heat 8 minutes; stir constantly.
Remove from heat; stir in almond extract.
Spoon rice mixture and peach puree alternately into stemmed parfait glasses.
Top with chopped peaches.
Garnish with mint.
Serve warm, or refrigerate until chilled.
