Elegant Coffee Cream Dessert
|Macaroons||13 3⁄4 Ounce|
|Coffee ice cream||1⁄2 Gallon, softened|
|Slivered almonds||2 Ounce (Toasted)|
|Whipping cream||1 Cup (16 tbs)|
|Powdered sugar||1 Tablespoon|
Crumble macaroons, and place on a baking sheet, bake at 400Â° for 5 to 8 minutes or until golden brown, stirring occasionally.
Set aside 1/3 cup macaroon crumbs.
Combine remaining macaroon crumbs and rum, let stand 30 minutes.
Press into bottom and 1 inch up sides of a 9-inch springform pan.
Combine coffee ice cream and slivered almonds, spoon into crust.
Freeze for 8 hours or until firm.
Combine whipping cream and powdered sugar, beat until soft peaks form.
Pipe whipped cream over ice cream.
Sprinkle reserved crumbs into the center.
