Grand Marnier Cream

  Sugar 3⁄4 Cup (12 tbs)
  Orange rind 1 Teaspoon, grated
  Orange juice 1⁄4 Cup (4 tbs)
  Water 1⁄2 Cup (8 tbs)
  Egg yolks 8
  Grand marnier 1⁄4 Cup (4 tbs) (or other orange-flavored liqueur)
  Whipping cream 1 Cup (16 tbs), whipped

Combine first 4 ingredients in a small saucepan.
Bring to a boil, stirring constantly.
Cook 5 minutes without stirring; set aside.
Beat egg yolks at high speed of an electric mixer until thick and lemon colored.
Gradually stir about one-fourth of hot mixture into yolks.
Add remaining hot mixture to yolk mixture, beating at high speed of an electric mixer.
Continue beating until mixture thickens and cools.
Stir in liqueur.
Fold in whipped cream.
Spoon into a 9-inch square pan.
Cover and freeze until firm
