Port Wine Jelly With Whipped Cream
|Sugar||1 Cup (16 tbs)|
|Water||1 Cup (16 tbs)|
|Lemon||1⁄2 Medium, rind grated|
|Lemon||1⁄2 Medium, juiced|
|Cinnamon stick||3 Inch (1 piece)|
|Unflavored gelatin||2 Tablespoon (2 envelopes)|
|Cold water||1 Cup (16 tbs)|
|Port wine||1 Cup (16 tbs)|
|Whipped cream||1⁄2 Cup (8 tbs) (adjust quantity as needed)|
Combine first 6 ingredients in a medium saucepan; bring to a boil.
Reduce heat, and simmer 5 minutes.
Soften gelatin in 1 cup cold water; let stand 5 minutes.
Add gelatin mixture to hot mixture, stirring until dissolved.
Strain into a 1-quart serving bowl; add port wine, and stir well.
Chill until firm.
Garnish with whipped cream and red grapes.
