Classic Crème Caramel

GETTING READY
1. Pre-heat the oven to 350 degrees F.

MAKING
2) In a dry saucepan, add the sugar
3) Melt the sugar to form a caramel
4) Once the caramel is formed pour them into the moulds
5) Ensure the caramel coats the base of the mould
6) In another pot, pour the milk and cream and bring to a light simmer
7) Score the vanilla pod using the back of a knife, scrape out the black seeds
8) Allow the milk to simmer
9) Take the pan off and allow the milk to rest and the vanilla to infuse
10) In a bowl, add the eggs and the egg yolk and 2/3rd cup of sugar
11) Beat them well using an electric mixer
12) Add the egg mixture to the milk using a sieve
13) Pour this mixture into the moulds
14) Place the moulds into a shallow baking tray and pour about 1/3 rd way up of water
15) Bake the pudding for about 40 minutes at 350F
16) Once baked, allow them to cool and place them in the refrigerator to cool
17) Run a knife round the edges of the mould and turn them out into a plate
18) Decorate with whipped cream and strawberries

SERVING
19) Serve the pudding chilled
