Sour Cream Pastry
|All purpose flour||1 1⁄2 Cup (24 tbs)|
|Egg yolk||1 Small|
|Sour cream||2 Tablespoon|
|Ice water||2 Tablespoon|
Sift the flour and salt into a large mixing bowl.
Add the butter and cut it into small pieces with a knife.
Using a pastry blender, cut the butter into the flour until the mixture resembles fine bread crumbs.
In a small bowl, mix the egg yolk with the sour cream and a little of the water.
Make a well in the center of the flour mixture and add the egg-yolk mixture.
Mix it into the flour with a knife, then knead the dough lightly, just enough to bring it together.
Shape the dough into a ball and wrap it in waxed paper.
Chill the dough in the refrigerator for 40 minutes before using.
