Frozen Cream Vesuvio
|Diced mixed candied fruits||4 Ounce (1 Jar)|
|Heavy cream/Whipping cream||1 Cup (16 tbs)|
|Chopped pistachio nuts/Roasted diced almonds||1⁄2 Cup (8 tbs)|
|Vanilla ice cream||3 Pint, softened|
Early in day: Mix fruits and rum in small bowl; let stand 1 hour.
Whip cream until stiff; fold in fruits and 1/4 cup nuts.
Line 2 1/2-quart bowl with 2 pints ice cream.
Spoon fruit mixture into center.
Spoon rest of ice cream over top.
Cover with foil; freeze.
About 1 hour before serving: Dip bowl of ice cream into hot water for a moment; unmold onto serving plate.
Sprinkle with 1/4 cup nuts; freeze until served.
