Microwave Sour Cream Raisin Pie
|One crust pastry||1 (Microwaved 9 Inch)|
|Sugar||3⁄4 Cup (12 tbs)|
|Raisins||3⁄4 Cup (12 tbs)|
|Dairy sour cream||1 Cup (16 tbs)|
|Milk||1⁄2 Cup (8 tbs)|
|Meringue||1⁄2 Cup (8 tbs) (Prepared Using 3 Egg Whites, Adjust Quantity As Needed)|
In 4-cup measure or small mixing bowl, combine dry ingredients and raisins.
Blend in sour cream, then milk and egg yolks until smooth.
Microwave at High 5 to 6 minutes, or until very thick, stirring vigorously after 2 minutes, then every minute.
Beat until smooth.
Spoon into shell.
Top with meringue and microwave.
