Whipped Cream Dressing

Ingredients
  Butter/Margarine 1 Tablespoon
  All purpose flour 1 1⁄2 Tablespoon
  Sugar 5 Tablespoon
  Egg 1 , separated
  Salt 1 Pinch
  Pineapple juice 3⁄4 Cup (12 tbs) (plus 2 tablespoons)
  Whipping cream 1⁄3 Cup (5.33 tbs)
Directions

1. Melt butter in 1 1/2-quart saucepan over low heat; stir in flour until smooth. Remove pan from heat. Mix 4 tablespoons of the sugar, the egg yolk and salt in small bowl; blend into butter mixture. Stir pineapple juice into butter mixture. Cook over medium heat, stirring, until sauce is slightly thick, about 5 minutes.
2. Beat egg white in small mixer bowl at high speed until stiff but not dry; beat in remaining 1 tablespoon sugar. Stir egg white mixture into butter mixture; cook over low heat, stirring occasionally, 5 minutes longer. Pour mixture into large bowl; cover and refrigerate until cold, about 30 minutes.
3. Beat cream in small mixer bowl at high speed until stiff but not dry. Fold cream into egg mixture.
