Smoked Fish With Horseradish Cream
|Whipping cream||1 Cup (16 tbs)|
|Grated fresh horseradish||4 Tablespoon|
|White vinegar||2 Tablespoon|
|White pepper||To Taste|
|Chopped chives/Dill/parsley/combination||1 Teaspoon|
|Smoked trout/Sturgeon/salmon/other smoked fish||1 Pound, thinly sliced|
|Pumpernickel/Other dark bread||1 , thinly sliced|
|Unsalted butter||1 Tablespoon|
In a medium bowl, whip cream and sugar until soft peaks form.
Fold in horseradish and vinegar.
Add salt and white pepper to taste.
Spoon into a small serving bowl.
Sprinkle with chives, dill, parsley or combination.
Arrange sliced fish and bread on a platter.
Let guests butter bread and top with smoked fish.
