Smoked Fish With Horseradish Cream

Ingredients
  Whipping cream 1 Cup (16 tbs)
  Sugar 1⁄2 Teaspoon
  Grated fresh horseradish 4 Tablespoon
  White vinegar 2 Tablespoon
  Salt To Taste
  White pepper To Taste
  Chopped chives/Dill/parsley/combination 1 Teaspoon
  Smoked trout/Sturgeon/salmon/other smoked fish 1 Pound, thinly sliced
  Pumpernickel/Other dark bread 1 , thinly sliced
  Unsalted butter 1 Tablespoon
Directions

In a medium bowl, whip cream and sugar until soft peaks form.
Fold in horseradish and vinegar.
Add salt and white pepper to taste.
Spoon into a small serving bowl.
Sprinkle with chives, dill, parsley or combination.
Arrange sliced fish and bread on a platter.
Let guests butter bread and top with smoked fish.
