Sour Cream Cookies
|Low calorie margarine||1⁄2 Cup (8 tbs)|
|Granulated fructose||1⁄2 Cup (8 tbs)|
|Baking soda||1⁄4 Teaspoon|
|Sour cream||1⁄4 Cup (4 tbs) (Dairy Or Regular)|
|Lemon zest||1⁄2 Teaspoon, grated|
|Vanilla extract||1⁄2 Teaspoon|
|Cake flour||3 Cup (48 tbs), sifted|
Cream margarine and fructose together until well blended.
Beat in egg.
Dissolve baking soda in sour cream; then beat into creamed mixture.
Stir in lemon zest and vanilla.
Next, stir in sifted cake flour. (Dough must be firm.) Cut into 50 thin slices.
Bake at 375°F (190°C) for 8 to 10 minutes, watching cookies carefully to prevent burning.
