Sour Cream Cookies

Ingredients
  Low calorie margarine 1⁄2 Cup (8 tbs)
  Granulated fructose 1⁄2 Cup (8 tbs)
  Egg 1
  Baking soda 1⁄4 Teaspoon
  Sour cream 1⁄4 Cup (4 tbs) (Dairy Or Regular)
  Lemon zest 1⁄2 Teaspoon, grated
  Vanilla extract 1⁄2 Teaspoon
  Cake flour 3 Cup (48 tbs), sifted
Directions

Cream margarine and fructose together until well blended.
Beat in egg.
Dissolve baking soda in sour cream; then beat into creamed mixture.
Stir in lemon zest and vanilla.
Next, stir in sifted cake flour. (Dough must be firm.) Cut into 50 thin slices.
Bake at 375°F (190°C) for 8 to 10 minutes, watching cookies carefully to prevent burning.
