Pastitsio Cream Sauce
|Onions||2 , chopped|
|Tomato paste||2 Tablespoon|
|Elbow macaroni||1 Pound|
|Ground meat||2 Pound|
|Eggs||3 , beaten|
|Grated cheese||1 Tablespoon|
|Water||1⁄2 Cup (8 tbs)|
|Cream sauce||1 Tablespoon|
Saute onions in butter until golden.
Add meat and cook, stirring, until meat is browned.
Add cinnamon and salt and pepper to taste.
Add water and tomato paste and cook for 5 minutes.
Cook macaroni according to directions on package.
Drain and rinse.
When lukewarm add eggs and the 1 tablespoon salt to the macaroni and mix well.
Put half the macaroni in a buttered 9X13X2 inch pan and sprinkle generously with grated cheese.
Add meat mixture and sprinkle with cheese.
Add remaining macaroni and sprinkle with cheese.
Bake in a 350 degree oven for 10 minutes.
Top with cream sauce, sprinkle with cheese, and bake for 30 minutes longer or until well browned.
