Gooseberry Cream 1

Ingredients
  Ripe dessert gooseberries 1 Pound
  Caster sugar 1 Tablespoon
  Cream 2 Cup (32 tbs) (1 Gill)
  Lemon juice 1⁄2
Directions

Press ripe gooseberries through a sieve to extract all the pulp and juice.
Add sugar and lemon juice and stir together.
Whip cream stiffly and fold it into the mixture.
Chill thoroughly for at least an hour, before putting it into individual glasses.
