Classic Coeur A La Creme
|Cream cheese||4 Ounce|
|Cottage cheese||4 Ounce|
|Fruit sugar||To Taste|
|Cream||2⁄3 Cup (10.67 tbs)|
|Strawberries/Raspberries / red currants||1 Cup (16 tbs)|
|Sliced chinese gooseberries||1 Cup (16 tbs)|
Rub cheeses through a sieve and add sugar to taste.
Beat in whipped cream.
Place mixture into four muslin lined heart shaped dishes (with tiny holes in the bottom).
Stand dishes on a deep plate and place in refrigerator to drain for approximately 12 hours.
Turn the hearts out, remove muslin and serve with cream and sugared berries, Chinese gooseberries and passionfruit, on top.
Variations: If you don't have special dishes, use the mixture in eight tiny pastry tartlet cases.
Spread mixture smoothly into the cold tartlet cases.
Cover with tiny strawberries or sliced berries.
Glaze with red currant jelly.
Whip the cream and pipe on, in heart shapes if desired.
