Mustard Crawfish

  Seasoning mix 1 Teaspoon
  Dry mustard 2 Teaspoon
  Salt 1 1⁄2 Teaspoon
  Dried sweet basil 1 1⁄2 Teaspoon
  Garlic powder 1 Teaspoon
  Sweet paprika 3⁄4 Teaspoon
  Onion powder 3⁄4 Teaspoon
  Black pepper 1⁄2 Teaspoon
  White pepper 3⁄4 Teaspoon
For creamy dressing
  Nonfat cottage cheese 1 Cup (16 tbs)
  Evaporated skim milk 3 Ounce
  Creole mustard/Brown mustard 2 Tablespoon
  Lemon juice 1 1⁄2 Tablespoon
  Cooked crawfish tail meat 1 1⁄2 Pound
  Thinly sliced green onions 1⁄2 Cup (8 tbs)

Combine the seasoning mix ingredients in a small bowl.
Sprinkle 2 teaspoons of this mixture over the crawfish and mix it in.
Combine the dressing ingredients in a blender and puree until smooth and creamy.
Place the crawfish, remaining seasoning mix, and green onions in a large bowl, add the dressing, and gently fold together until completely blended.
Chill until ready to serve.
