Celery | 1/2 Cup (8 tbs) , chopped | |
Red bell pepper | 1/2 Cup (8 tbs) , chopped | |
Onion | 1/2 Cup (8 tbs) , chopped finely | |
Salt and pepper | To Taste | |
Chopped garilc | 1 Tablespoon | |
Chopped fresh thyme | 1 1/2 Teaspoon | |
Crawfish tails | 1 Pound | |
Cajun seasoning | 1 Tablespoon | |
Chopped green onion | 1/4 Cup (4 tbs) (((as needed))) | |
Mayonnaise | 1/2 Cup (8 tbs) | |
Creole mustard | 2 1/2 Teaspoon | |
Shredded provolone cheese | 4 Ounce (((or cheese of your choice))) | |
Shredded extra sharp cheddar cheese | 4 Ounce (((white cheddar))) | |
For serving | ||
French loaf | 3 (((as needed))) | |
Unsalted butter | 1 Tablespoon (((as needed))) |
MAKING
1. In a pan, heat butter, add celery, pepper, and onion. Season with salt and pepper. Stir and cook for 5 minutes.
2. Add garlic, thyme and cook for another 2 minutes.
3. Stir in crawfish and then season again with 1 teaspoon of salt. Add Cajun seasoning and cook for about 3 minutes.
4. Stir in green onion, turn off the flame and then allow the mixture to cool.
5. Add mayonnaise and mustard. Give it a good stir.
6. Stir in provolone and cheddar cheese.
7. Preheat oven to 350 degree F.
FINALIZING
8. Cut loaf in half and spread the crawfish mixture on the bottom side. Cover with the top half and brush with butter.
9. Wrap the loaf in a piece of foil and fold the ends. Pop in oven and bake for 20-25minutes.
