Cranberry Refrigerator Dessert
|Cranberries||2 Cup (32 tbs), ground|
|Banana||1 Large, diced|
|Sugar||1⁄2 Cup (8 tbs)|
|Graham cracker crumbs||2 Cup (32 tbs)|
|Butter||1⁄2 Cup (8 tbs)|
|Sugar||1 Cup (16 tbs)|
|Nuts||1⁄2 Cup (8 tbs)|
|Whipping cream||1 Cup (16 tbs)|
Grind 2 cups 1/2 lb. fresh cranberries.
Combine with 1 large banana, diced (1 cup), and 1/2 cup sugar; set aside.
Combine 2 cups graham cracker crumbs and 6 tbs.butter, melted.
Press half the crumb mixture into bottom of a 9" x 9" x 2" pan.
Cream 1/2 cup butter and 1 cup sugar until light.
Add 2 eggs and beat until fluffy.
Fold in 1/2 cup chopped nuts (pecans are best).
Spread over the crumb mixture layer.
Top with cranberry mixture.
Whip 1 cup whipping cream just until soft peaks form; spread over all.
Sprinkle with remaining crumbs; press down slightly.
Chill 6 hours or overnight.
