Cranberry Shimmer

  Unflavored gelatin 1 Tablespoon (1 Envelope)
  Cranberry juice cocktail 1 3⁄4 Cup (28 tbs)
  Unsweetened applesauce 1 Cup (16 tbs)
  Crushed pineapple with juice 1⁄2 Cup (8 tbs) (Natural Juices)
  Grated lemon rind 1⁄2 Teaspoon

1. Sprinkle gelatin over 1/2 cup of the cranberry juice in small saucepan; let stand for 5 minutes to soften. Place over very low heat just until gelatin is dissolved.
2. Stir in remaining cranberry juice, the applesauce, un-drained pineapple and lemon rind. Place in 3-cup mold. Chill until set, about 1 1/2 hours. Dip mold into hot water and invert onto serving platter; shake to release mold.
