|Unflavored gelatin||1 Tablespoon (1 Envelope)|
|Sugar||1⁄4 Cup (4 tbs)|
|Cranberry juice cocktail||1 3⁄4 Cup (28 tbs)|
|Grated orange rind||1⁄2 Teaspoon|
1. Combine gelatin, sugar and 1/2 cup of the cranberry juice in small saucepan; place over very low heat just until gelatin is dissolved.
2. Stir in remaining cranberry juice and the orange rind. Place in large bowl. Chill until mixture is consistency of unbeaten egg whites, 30 to 45 minutes.
3. Using electric mixer at high speed, beat cranberry mixture until light and fluffy. Divide among 4 dessert dishes; chill until set, about 1 hour.
