Zucchini Wraps With Cranberry Orange Salsa

We’re really gearing it up for Thanksgiving here on the Renegade Health show… Annmarie is putting together the menu that we’ll share with family that will include a lot of raw food holiday options. Ingredients
  Cranberry salsa 1 Cup (16 tbs)
  Cranberries 3 Cup (48 tbs), thawed and coarsely chopped
  Raw honey 1⁄2 Cup (8 tbs)
  Navel oranges 2 Medium, peeled and sectioned and cut into chunks
  Red onion 1 Small, finely chopped
  Minced cilantro 1⁄2 Cup (8 tbs)
  Cayenne 1 Pinch
  Lime juice 2 Tablespoon
  Zucchini 1 Large, cut into long flat strip with cai bao
  Red bell pepper 1 , julienned
  Carrot 1 Large, julienned
  Yellow zucchini 1 Small, julienned
  Parsnip 1 Small, julienned
  Bok choy 1 Small
  Apple 1⁄2 Small, julienned
  Ginger 1 Small, julienned
  Scallion 1 , sliced thin
Directions

Cranberry Salsa:
In bowl, combine cranberries and honey. Then stir in all other ingredients. Cover and refrigerate for at least 2 hours.

Zucchini Wraps :
Thinly slice long wide flat stripes of zucchini with cai bao. Julienne other veggies and slowly roll with zucchini. Top with Cranberry Salsa! Serve with friends and family and enjoy!
