Cranberry And Red Pepper Relish

Cranberry and red pepper relish is a peppy and fruity relish. Made with fresh cranberries, bell peppers, green onions and fresh cilantro leaves, all processed with orange juice and lime peel, this is both simple and fresh. With added sugar to taste, the cranberry and red pepper relish is chilled to serve.
Ingredients
  Red bell peppers 2 Medium, roasted, peeled, seeded and cut into 1-inch pieces
  Fresh cranberries 1 Cup (16 tbs), drained, rinsed
  Green onion 1 , cut into 1-inch pieces
  Fresh cilantro leaves 3 Tablespoon
  Fresh orange juice 2 Tablespoon
  Grated lime peel 1⁄2 Teaspoon
  Sugar 1⁄2 Cup (8 tbs)
  Salt 1⁄8 Teaspoon
Directions

In food processor fitted with steel blade, process peppers, cranberries, onion, cilantro, orange juice and lime peel until coarsely chopped.
In medium-size bowl combine cranberry mixture, sugar and salt.
Cover and refrigerate 1 or more hours to allow flavors to mix.
