Cranberry And Red Pepper Relish
|Red bell peppers||2 Medium, roasted, peeled, seeded and cut into 1-inch pieces|
|Fresh cranberries||1 Cup (16 tbs), drained, rinsed|
|Green onion||1 , cut into 1-inch pieces|
|Fresh cilantro leaves||3 Tablespoon|
|Fresh orange juice||2 Tablespoon|
|Grated lime peel||1⁄2 Teaspoon|
|Sugar||1⁄2 Cup (8 tbs)|
In food processor fitted with steel blade, process peppers, cranberries, onion, cilantro, orange juice and lime peel until coarsely chopped.
In medium-size bowl combine cranberry mixture, sugar and salt.
Cover and refrigerate 1 or more hours to allow flavors to mix.
