Spiced Cranberry Shrub
|Cranberry juice cocktail||1 1⁄4 Cup (20 tbs)|
|Unsweetened apple juice/Cider||1 1⁄4 Cup (20 tbs)|
|Cider vinegar||1⁄4 Cup (4 tbs)|
|Cinnamon stick||1 , cracked|
|Lemon peel strip||2 (2 Inches Long And 1/2 Inch Wide)|
|Sodium free seltzer water||2 Cup (32 tbs)|
|Orange slices||4 (Thin)|
In a small heavy saucepan (preferably nonmetallic), place the cranberry juice cocktail, apple juice, vinegar, cinnamon stick, cloves, and lemon peel, and bring to a boil over moderately high heat.
Adjust the heat so that the mixture barely bubbles, cover, and simmer for 15 minutes.
Cool and strain into a 2 quart pitcher.
Fill 4 12 ounce glasses with ice cubes, divide the cranberry mixture among them, and top with the seltzer water.
Stir briskly and garnish each drink with an orange slice, if you like.
