Ingredients
  Eggplant 625 Milliliter
  Water/White wine 15 Milliliter
  Soda crackers 18
  Extra sharp cheddar cheese 125 Milliliter
  Chopped celery 60 Milliliter
  Basil 5 Milliliter
  Melted butter 15 Milliliter
  Sugar 2 Milliliter
  Salt 2 Milliliter
  Pepper 1 Milliliter
  Cream 125 Milliliter
  Cornstarch 15 Milliliter
Directions

Place the eggplant cubes in a 4-cup (1 L) microwave-safe dish.
Add the water or white wine.
Cover and microwave at HIGH 4 minutes.
Drain thoroughly and set aside.
Mix all the remaining ingredients.
Add to the eggplant.
Stir until well mixed.
Cover and microwave at HIGH 8 to 9 minutes.
Let stand 3 to 4 minutes.
Stir and serve.
