Pecan Cracker Pie

Ingredients
  Egg whites 3
  Baking powder 1⁄2 Teaspoon
  Sugar 1 Cup (16 tbs)
  Pecans 1⁄2 Cup (8 tbs), broken
  Vanilla 1⁄2 Teaspoon
  Unsalted soda crackers 12 Large, crushed
  Whipped cream   (as required)
Directions

Beat egg whites with baking powder until stiff peaks form; add sugar.
Beat thoroughly.
Fold in pecans, vanilla and crackers, stirring well.
Pour into 9-inch buttered pie plate.
Bake at 375 degrees for 20 min- Chill.
Cover with whipped cream; refrigerate UIC9.
