Pecan Cracker Pie
|Baking powder||1⁄2 Teaspoon|
|Sugar||1 Cup (16 tbs)|
|Pecans||1⁄2 Cup (8 tbs), broken|
|Unsalted soda crackers||12 Large, crushed|
|Whipped cream||(as required)|
Beat egg whites with baking powder until stiff peaks form; add sugar.
Fold in pecans, vanilla and crackers, stirring well.
Pour into 9-inch buttered pie plate.
Bake at 375 degrees for 20 min- Chill.
Cover with whipped cream; refrigerate UIC9.
