Christmas Cracker Cookies

Ingredients
  Walnuts 2 Ounce
  Raisins 6 Ounce
  Glace cherries 2 Ounce
  Wafer biscuits 8 Ounce (Plain Variety)
  Brown sugar 3 Ounce
  Cocoa 3 Tablespoon (Leveled)
  Salt 1⁄4 Teaspoon
  Butter 3 Ounce
  Raspberry jam 3 Tablespoon
  Sweet sherry 3 Tablespoon
  Coconut 1 1⁄2 Ounce (Coarse Variety For Rolling)
Directions

GETTING READY
1. Start by preheating the oven to 450F degrees
2. Place the walnuts, raisins, and glace cherries and chop them finely into small pieces
3. Take 2 sheets of greaseproof paper, and place the wafer biscuits between the paper and break it into small crumbs, then roll the paper firmly
4. In a basin, place the sugar, cocoa, salt and biscuit crumbs
5. Also add the chopped walnuts, raisins and cherries to the basin
6. In a sacuepan, place the butter, jam and sherry, keep heating until the butter melts
7. Now pour this mixture into the dry ingredeints and mix all together properly
8. In a bowl, knead this combined mixture properly, using you hands, now pour the mixture onto a board and from into a roll of 1/2 inches in diameter
9. In the greasproof paper, roll in the coarse coconut, and wrap it, let it chill until it turns firm
10. Finally bake this mixture in the over, until it turns golden and crisp
11. Once baked completely remove from the oven adn let it cool on a wire rack
12. Finally cut into 1/2-inch slices

SERVING
13. Serve with tea or coffee
