Sesame Crackers

  Warm water 3⁄4 Cup (12 tbs)
  Active dry yeast 2 Teaspoon
  Honey 2 Teaspoon
  Sesame tahini 2 Tablespoon
  Whole wheat pastry flour 1 1⁄2 Cup (24 tbs)
  Sesame seeds 1 Teaspoon

1. In a small bowl, mix together water, yeast and honey till the yeast dissolves; add tahini and mix into a large bowl with flour in it
2. Knead with the hand briefly and keep in a warm, draft-free place to rise upto double in bulk, for say an hour; punch down and knead on a flour dusted surface
3. Divide this dough into four and roll each piece thin, sprinkleing with a layer of sesame seeds all the while
4. Cut the dough with a round cookie cutter and place these cutouts on a cookie sheet with a light coat of grease on it
5. Bake them at 350°F for fifteen minutes adn turn the crackers towards the end so as to ensure crispness

6. Serve as appropriate
