Tofu Cheese Crackers

Ingredients
  Tofu 4 Ounce, drained (bean curd)
  Grated parmesan cheese 2 Tablespoon
  Finely chopped celery 2 Tablespoon
  Finely chopped carrot 2 Tablespoon
  Finely chopped green pepper 1 Tablespoon
  Reduced calorie mayonnaise/Salad dressing 1 Tablespoon
  Seasoned salt 1⁄4 Teaspoon
  Pepper 1 Dash
  Rye crackers 48 (crispy)
Directions

For spread, in a small mixing bowl mash the tofu with a fork.
Stir in Parmesan cheese, celery, carrot, green onion, mayonnaise or salad dressing, seasoned salt, and pepper.
Cover and chill till serving time.
For each serving, top 1 cracker with 1 teaspoon of the spread.
Cover and chill any remaining spread up to 4 days.
