Tofu Cheese Crackers
|Tofu||4 Ounce, drained (bean curd)|
|Grated parmesan cheese||2 Tablespoon|
|Finely chopped celery||2 Tablespoon|
|Finely chopped carrot||2 Tablespoon|
|Finely chopped green pepper||1 Tablespoon|
|Reduced calorie mayonnaise/Salad dressing||1 Tablespoon|
|Seasoned salt||1⁄4 Teaspoon|
|Rye crackers||48 (crispy)|
For spread, in a small mixing bowl mash the tofu with a fork.
Stir in Parmesan cheese, celery, carrot, green onion, mayonnaise or salad dressing, seasoned salt, and pepper.
Cover and chill till serving time.
For each serving, top 1 cracker with 1 teaspoon of the spread.
Cover and chill any remaining spread up to 4 days.
