Crab A La Cordon Bleu
|Chopped cooked chicken||2 Cup (32 tbs)|
|Cooked ham slice||3 , cut into julienne strips|
|Swiss cheese slice||3 , cut into julienne strips|
|Manicotti shells/Manicotti tubes||6 , cooked, drained|
|For crab sauce|
|All purpose flour||2 Tablespoon|
|Half and half||3⁄4 Cup (12 tbs)|
|Milk||1⁄2 Cup (8 tbs)|
|White pepper||To Taste|
|Frozen crab||10 Ounce, drained and thawed (1 Package)|
Butter an 11" x 7" baking dish.
Divide chicken, ham and cheese evenly into 6 portions.
Place in centers of Manicotti Crepes.
Fold sides of crepes over filling.
Spoon 1/2 cup Crab Sauce in bottom of prepared baking dish.
Place filled crepes seam side down on top of sauce.
Spoon remaining Crab Sauce over crepes.
Cover and place in cold oven.
Set temperature control at 350Â°F (175Â°C).
Bake 20 minutes.
Makes 6 servings.
Crab Sauce: Melt butter in a 1 quart saucepan.
Blend flour into butter.
Cook until bubbly.
Slowly add half and half and milk, salt and pepper, stirring constantly.
Continue stirring until thickened.
Add crab and heat thoroughly.
Makes 1-1/2 cups.
