Crab Stuffed Artichokes
|Minced parsley||2 Tablespoon|
|Shallots/Green onion||1 , chopped|
|Lemon juice||1 1⁄2 Tablespoon|
|Olive oil||2 Teaspoon|
|Liquid pepper seasoning||1 Dash|
|Crumbled dried tarragon||1⁄4 Teaspoon|
|Dungeness crab/Small cooked shrimp / lobster||1 Pound|
|Cooked artichokes||4 Large|
|Goddess dressing||1 Tablespoon|
Mix together in a bowl the parsley, shallot, lemon juice, oil, salt, hot pepper seasoning, and tarragon.
Add seafood and mix lightly.
Cover and chill.
Trim off stem end of each artichoke and scoop out center choke.
Gently spread open leaves slightly and spoon marinated seafood into the center of each.
Arrange on greens and pass Green Goddess Yogurt Dressing.
