|Crab/1 fresh crab, shredded||1 Can (10 oz)|
|Mayonnaise||1⁄2 Cup (8 tbs)|
|Onion||1 , diced|
|Cheddar cheese||1⁄2 Cup (8 tbs)|
|Swiss cheese||1⁄2 Cup (8 tbs)|
|Mozzarella cheese||1⁄2 Cup (8 tbs)|
|Italian seasoning||To Taste|
|Garlic salt||To Taste|
Take raw fresh artichokes; wash and core center.
Break middle, remove, leaving cuplike artichoke.
Mix together thoroughly the shredded crab, diced onion and the cheese.
Mix to consistency with mayonnaise.
Add salt, pepper, Italian seasoning and garlic salt to taste.
Mix well, to consistency of salad dressing.
Stuff center of artichokes with mixture.
Set in deep baking dish.
Fill 1/2 of the way with water.
Cover and bake for 1 hour or until tender.
Remove and serve hot.
Pull leaves off artichoke, dip in melted center and enjoy
