Grilled Crab Lettuce Roll-Ups
|Crabmeat||12 Ounce, drained (fresh / canned)|
|Fresh bread crumbs||1 Cup (16 tbs) (white or whole wheat)|
|Finely chopped onion||1⁄2 Cup (8 tbs)|
|Nonfat mayonnaise||1⁄2 Cup (8 tbs)|
|Dijon mustard||1 Teaspoon|
|Black pepper||To Taste|
|Lettuce leaves||8 Large, cleaned and drained (romaine or butter lettuce)|
|Crab cocktail sauce||1⁄4 Cup (4 tbs) (prepared)|
|Non fat cooking spray||1|
Coat the grill with cooking spray and preheat for 5 minutes.
Combine the crabmeat, bread crumbs, onion, mayonnaise, mustard, pepper and salt.
Lightly spread the mixture in the grill and cook for 2-3 minutes.
The crab mixture will be heated through and lightly browned when done.
With theplastic spatula, remove the crab filling from the grill and place on 4 individual plates.
To assemble, place a heaping spoonful of crab on each lettuce leaf and roll up.
Dip the lettuce into the cocktail sauce, as desired.
